Applications
There are many uses for these breadcrumbs: for direct sale as a high value added consumer product. In the past people at home ground up stale bread to make breadcrumbs, nowadays more and more people are buying fresh breadcrumbs from supermarkets. And cooking is becoming more creative, and so people are using breadcrumbs more and more for new and exotic dishes. And for simple dishes too, frying breaded fish adds a pleasant crunchy texture.
These are just some examples:
-
Schnitzel. This is breaded and fried veal that is very popular in Germany;
-
Fish. All kinds of fish can be breaded and fried to give a nice texture and pleasant appearance;
-
Prawns. These can be breaded and deep fried;
-
Vegetables. Choose a suitable vegetable, coat it in breadcrumbs and fry it in good quality oil. The advantage of this covering is that the vegetable can be dipped in a nice sauce such as soy sauce and it will absorb the flavour;
-
Köfte. This traditional Turkish dish includes bread in its ingredients. Why not use fresh breadcrumbs;
-
Croquettes. Breadcrumbs can be used to make the dough;
-
Chicken. Deep fried chicken with a flavoured breadcrumb coating is an American favourite.
As well as at home, industrial food manufacturers are big users of breadcrumbs in their products, from the breading of fried food, as additive to stuffing, croquettes, sausage meat, and for many other uses.
